Fragrant Fresh Blackberry Pie

Blackberry is a beautiful fragrant berry with subtle flavour which is easily lost in pies. For this reason baking blackberries is a fairly problematic task. The subtle flavours are easily destroyed by sugar and high temperatures. Therefore one of the key elements in construction of successful blackberry pie is additional fruit which will enhance the flavour of fragrant blackberry. Such fruit can be apple or lemon. Both with protect and enhance fresh blackberries in the mix.

  • 300-400g fresh blackberries
  • 3-4 table spoons sugar
  • 2-3 table spoons corn starch
  • 1/2 lemon (zest and juice)
  • or 1 apple (cut into small pieces)
  • pie crust for 1 pie

We are not going to discuss the pie crust here. Recipe for simple pie crust can be found here. The filling of the pie should be mixed together and spread over pastry base. Cover the pie with more pastry or use strips to decorate it and arrange vents.

Try using Blackberry conserve or blueberry conserve as substitute for sugar. This may give your filling a more fluid, more aromatic consistency.
